Architecture and Design of Rêu Dining Tra Que

Rêu Dining Trà Quế’s architecture and design is a standout features that sets it apart from other restaurants in the area. The restaurant was created in collaboration with architects Nguyễn Hòa Hiệp and Kevin Nhật Nguyễn, and their efforts have resulted in a modern and sleek space that also incorporates traditional elements such as wooden beams and tiled roofs. The restaurant is based on the concept of a small and peaceful village, featuring ten separate blocks that each have their own unique characteristics, with a capacity of up to 600-800 people at once. Each block has its own specific capacity, suitable for different needs and group sizes, all aimed at providing guests with a peaceful and tranquil atmosphere in the famous vegetable village of Tra Que.

One of the most impressive aspects of the restaurant’s design is the use of reclaimed materials, such as old wooden boats, and other materials like old ceramic tiles, old bamboo, wine bottles, and jars, as well as old plates and bowls, all of which are used in the spirit of recycling. The restaurant’s representative shared that using reclaimed materials, although more expensive than using traditional materials, is a message of responsibility and depth from Rêu. It is a way for customers to slow down, appreciate and treasure old objects, and be more environmentally friendly. This way, everyone can contribute to making the world greener.

Dining Experience at Rêu Dining Tra Que

Upon arriving at the restaurant, guests can try out various dishes that incorporate the principles of molecular gastronomy, a sub-branch present in the food science industry, usually only found in fine dining restaurants. According to the restaurant’s representative, molecular cuisine is a smooth combination, reaching a harmony between science and art. The restaurant is situated on the Co Co river, making it a destination to enjoy food in a beautiful setting.

The restaurant’s Tasting Menu is a unique experience, where each plate of food is a small dish, just enough for 2-3 chews, and usually, there are 9-18 dishes in a set menu. The restaurant’s representative shared that with this format, the dishes not only taste delicious but also bring a culinary philosophy awakened by the five senses: beautiful look (sight), delicious food (taste), seductive aroma (smell), hear the story of each dish (hearing) and touch the dishes cooked from the heart (touch).

The restaurant’s target audience is foreign diners who want to experience Vietnamese culture in general and Tra Que vegetable village in particular – a tourist destination to experience the vividness of tourists when coming to Hoi An. Rêu Dining Trà Quế has contributed to creating a certain harmony in terms of cuisine as well as architecture, giving diners engaging experiences when coming to Vietnam. The restaurant’s co-founders expect diners to have delicious and different culinary experiences in modern cuisine based on Vietnamese ingredients and culture to create creative cuisine. “Rêu was born out of gratitude for Hoi An culture in particular and Vietnamese culture in general,” the restaurant’s representative shared.
